If Dark Souls 1 were a fighting game I'm pretty sure backstabs would outright be banned from any serious play. If you don't care about serious balance that's fine but it's hardly the fault of people who don't like how they work in 1 when they complain about how dumb they are. And then when you throw in the poise mechanic of 1 it gets even worse.

Am I the only one being invaded and being killed by backstabs while the foe isn't even behind me ? Mata level pvp isn't funny at all Being invaded, you fight the guy, dodge him and get teleported forward the guy and he one shots you otherwise that wouldn't be funny at all Wooooooow best experience in my life ! This is why all your backstabs feel fair and most of someone else's feel bullshit. It's just the way games work when you play them online, it's just that Souls mechanics make you notice it more. It's unfortunate but unless you can solve the problem of updating the connection theoretically infinitely then there's no reasonable way to fix it.There are very few safe openings in phase 3, but with the right spacing you can run under the black flame plunge, backstab, charged R2, R1 spam for solid damage, then dodge until you can bait it out again. The spinning ice plunge can be roll backstabbed with good spacing, but there's less time to position yourself.
